IKEA’s ScrapsBook to save leftovers

IKEA encourages people to use kitchen scraps: they’ve collected recipes that can be used to save leftover ingredients in a freely downloadable cookbook.

The Canadian IKEA, in collaboration with ten North American chefs, has put together fifty recipes, which feature leftover ingredients that usually end up in the trash.

The book includes recipes for reusing stale bread and wilting veggies, as well as for repurposing leftover coffee and coffee grounds. When compiling the recipes, they were aiming for diversity, and they even rethought the dishes of different cultures.

By 2030, IKEA’s goal is to operate according to the principles of circular economy, and with the cookbook, they are trying to introduce this concept to their customers.
